[Beef barley soup] Hearty winter soup

I love barley, not (only) because it is used as an ingredient in beer and other alcoholic beverages, but also is wonderfully chewy and has somewhat nutty flavour.

A bowl of hot beef barley soup is a very satisfying meal, but not very rich calorie wise.

Barley contains amino acids, including the eight essential ones.

It would be great if you can make your own broth,
but campbell broth(or any other decent broth) will do too. :)

The origin of beef barley soup has been known to be Scotch broth which is a filling soup, originating in Scotland.

Here goes a very yummy + simple + hearty soup recipe:


Ingredients:
2 tablespoons olive oil
10 oz (or 300g) beef
1 onion
2 carrots
1 clove garlic
6 cup beef broth
1/2-2/3 cup barley
2 teaspoon thyme (dried)
fresh parseley


How to make:
1. chop carrots and onion into small cubes.


2. Brown beef  in 2 tablespoons of olive oil

and put aside.


3. Add onion and stir occasionally until onion becomes transparent.


4. Add carrots.


5. Add 1/2 cups beef broth to pot and boil, scraping the sides of the pot if necessary, e.g. if there's any vegetable on the wall.

6. Cut beef into smaller pieces and add back.

7. Add the rest beef broth(5+1/2 cups), thyme, and barley.

8. Bring soup to a boil, then lower heat to a simmer for 4-50 minutes.

9. Season to taste with salt, pepper, and parsely,

then serve.
