[Eggnog cake] German eggnog cake that prolongs holiday cheers

This German eggnog cake is a perfect recipe to use up leftover eggnog from Christmas.

To be honest, I freeze a few plastic bags of eggnog by the end of every year, since a couple of years, so that I can bake Eierlikörkuchen, or eggnog cake, at any time of the year.

It's very easy to make,
and it melts in your mouth.


It truely is a mouth watering sort-of pound cake.

This recipe is adapted from
As the original recipe was based on weight,
I needed to convert all the ingredients to volume measurement.
Even though I use europeen recipes often, I always convert weight measurement to the volume scales.

If you like eggnog, you will just love this Bayern cake.
Even if you are not a big fan of eggnog, you will still like these toothsome treats.

Here goes the recipe for Eierlikörkuchen.

 Ingredients

1 Cup eggnog (preferably non-alchoholic)
5 eggs, room temperature
2/3 Cup sugar
1 teaspoon vanilla extract
2 + 1/2 teaspoons baking powder
1 cup vegetable oil
1 cup all-purpose flour
(1 cup - 3 tablespoons) cornstarch

Topping: 3-4 tablespoons sugar powder


How to make:

1. Preheat the oven to 350 degrees Fahrenheit.



2. Grease a bundt cake pan.



3. In a mixing bowl, mix flour, cornstarch, and baking powder together.



4. Beat eggs with sugar on medium speed.



5. Add vanilla and mix well.


6. Add vegetable oil gradually.
The batter would look foamy at this point.



7. Add eggnog.
Now wet part of the batter is ready.



8. Add the mixed dry ingredients to the wet ingredients.
Mix the ingredients just until incorporated.



9. Pour the batter into the greased bundt cake pan
and bake in the preheated oven, for 6-70 minutes.



This one just came out of the oven.


Cool in pan for 10 minutes before inverting onto a wire rack. 



Sift powdered sugar over the top of the cake while it's still warm.



Cool completely.


Cut cake into slices and serve with tea or coffee. :)



It's a very rich & toothsome cake.
