[Insalata Caprese] Fresh mozzarella salad in Capri style

As Canada day was Sunday, it's an official holiday today! Yay!!!! :)
What a relxed morning it is~


I find Caprese Salad one of very Italian dishes. It resembles the colors of the Italian flag, red (tomato), white (mozzarella) and green (basil).
It's so easy to make, but full of flavour with fresh ingredients.
Insalata Caprese or Caprese salad is a simple salad from the Italian region of Campania. The three main ingredients of the salad are buffalo mozzarella, tomatoes and basil. 
When I saw abundant basil leaves in my vegetable garden, I suddenly had a great urge to make Caprese salad.

I made it yesterday 5 minutes before lunch time. It is that easy and simple.

Here goes the recipe:

Ingredients
3 vine-ripe tomatoes
300g (or 2/3 pound) fresh mozzarella
20 to 30 leaves fresh basil
1/4 C Extra-virgin olive oil
2 Tablespoons Balsamic vinegar
1 teaspoon garlic, minced
Coarse salt and pepper

Directions

1. In a glass bowl, add Balsamic vinegar, olive oil, garlic and mix well.
Season with salt and pepper. Put aside.
2. Slice tomato and mozzarella into 1/4 inches (1 cm) thick.

3. Layer alternating slices of tomatoes and mozzarella, adding a basil leaf between each, on a shallow platter.

4. Drizzle the salad with the salad dressing prepared.
Then, it's ready to be served :)

We had it with barbecued shish kabob skewers.

It was a gorgeous day and tasty lunch. :)
