I don't know when and how, but this beef pot pie became my kids' fall-winter comfort food.
It's not only a comfort food for kids, but also a convenient food for the cook as well :) As far as tomato sauce (homemade or store-bought) and ground meat are ready, you can make this in no time.

As I make my own tomato sauce every two weeks or so, I use homemade tomato sauce
While most beef pot pie recipes use pie dough to make the shells of the pie, this one needs only quick biscuit dough on top. Remi likes both pie crust and biscuit unlike Pablo who doesn't like pie crust. On the contrary, Pablo loves biscuit crust(?).
Here goes the recipe for the easy beef pot pie.
(The recipe is adapted from Everyday Food's Italian potpies)
Ingredients
1 tablespoon olive oil
1 medium onion
2 carrots
Coarse salt and ground pepper
1 pound ground beef
2 cups homemade or store-bought tomato sauce
1 cup all-purpose flour, (spooned and leveled)
3/4 cup grated Parmesan
1 + 1/2 teaspoons baking powder
1/4 teaspoon dried rosemary
4 tablespoons butter, melted
1/2 cup milk
Directions
1. Preheat oven to 450 degrees.
2. Chop carrots and onion.
3. In a large skillet, heat oil over medium. Add onion and carrots, and season with salt and pepper. Cook, stirring occasionally, for 6 to 8 minutes.
4. Add beef, and cook, breaking up meat with a wooden spoon, until no longer pink, 3 to 5 minutes.
5. Add tomato sauce; bring to a boil, reduce to a simmer, and cook, stirring occasionally, until meat mixture has thickened, 8 to 10 minutes; set aside.
6. Grind rosemary and 1/2 teaspoon salt.
Grate Parmesan if you didn't yet. :)
7. In a medium bowl, whisk flour, Parmesan, baking powder, and ground rosemary & salt.
8. Make a well in center, and add melted butter and milk. Stir just until dough comes together.
9. Spoon meat mixture into ramekins. I use different size ramekins so that each of my family member can pick a ramekin according to their appetite! :)
10. Mound dough on top. Place on a large rimmed baking sheet, and bake until topping is golden brown and a toothpick inserted in topping comes out clean, 10 to 12 minutes.
Don't over-bake like me! Tops brown pretty quickly.
It's very easy to make. You can make it quickly for dinner on a weekday if you have tomato sauce and ground beef ready for you.
