Remi asked for pancakes for the breakfast last Saturday.
I don't make pancake as often as before since my kids go to a homeday care where
the caregiver makes pancake for them.
However, how can pancake be wrong for a weekend breakfast?
So, I was happy to make a few pancakes what Remie had asked the night before.
The pancake mix I make is not only very easy to make, but also very difficult to mess. :)
if you keep the following two rules:
First, do not overmix the batter. If you overmix it, you will end up eating some chewy pancakes.
Second, use only minimal amount of vegetable oil to make pancakes.
Now, I'll tell you my "divine" pancake mix recipe.
Ingredients:
1 Cup all-purpose flour
2 Tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 Cup milk
2 Tablespoon butter, melted
1 large egg
+ 1 tablespoon vegetable oil for pan

If you want to make buttermilk pancake, swap 1 Cup milk with buttermilk, and add 1/2 teaspoon of baking soda
How to make:
1. Preheat the oven to 170-220 F. (77-95 degrees celcius)
2. Combine flour, sugar, baking powder, and salt in a large mixing bowl.
3. Whisk egg and melted butter with milk.
4. Pour the wet ingredient into the flour mixture and whisk
5. Heat a large skillet over medium heat, and lightlly coat with vegetable oil.
Pour 1/4 cups of batter onto the skillet, and cook until a few bubbles appear on the surface.

6. Flip with a spatula, and cook for a minute,on the other side.
7. Keep the pancakes in the preheated oven.
Serve hot with maple sysrup and butter.:)
