Before I tasted the banana bread my friend made a few years ago
I didn't even like it. It must be something to do with the name of the cake.
The name "banana bread" which means a bread made with banana, was not appealing at all to me at least.
Don't get me wrong, I like both bread and cake,
but just banana seems right only to be associated with a cake.
Then, one day, my friend P baked a loaf of banana bread, which I couldn't turn down.

And, strangely(?), I like it since then and there.
It was sweet, but excessively: smell of the fresh baked banana bread was hard to explain.

P gave me all the ingredients without directions.
But, actually you don't need much instructions to make a loaf of banana bread.

Once you have all the ingredients needed, you are already almost guaranteed to have a loaf of decent banana bread in 60 minutes.

If you want to shorten baking time, you can bake them in muffin tin too.
Here Goes Colleen's ultimate banana bread recipe:
Ingredients
*** Dry ingredients ***
1+1/4C all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
a pinch of salt
3/4C sugar
*** Wet ingredients ***
3 over ripe bananas
1ts vanilla extract
1/3C butter (room temperature)
1 large egg
How to make
1. Preheat the oven to 350 degrees.
2. In a big mixing bowl, combine all the dry ingredients except sugar!
4. cream butter & sugar
5. Stir in eggs and vanilla until well blended.
7. Stir banana mixture into flour mixture; stir just to moisten.
8. Pour batter into prepared loaf pan,

9. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean.
If you are baking in muffin tins, do bake for only 1/2 hour before you check if it's already baked.
10. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
Then, it's (almost) ready to be eaten.
I usually bake in the night before and eat cakes as my breakfast.
Believe me, I have to gather all my patience not to eat it!

I searched some recipies and found this blog, then I realized i read this recipe few years ago! I am so glad to "find" this blog by chance, and still thanks to share your wonderful recipe with us.
